We are proud to offer True South West Flour, brought to you through the South West Grain Network. This flour is made from 100% organic grain, grown entirely within the South West of England, and represents a true connection between farmers, millers, and bakers.

The grain is a population wheat, featuring a blend of varieties Marigertoba and YQ. As a non-commodity wheat, it allows us to pay farmers fairly based on the real value of their grain rather than fluctuating global market prices. While this results in a higher cost per kilogram, it’s a necessary step toward creating a more ethical, sustainable, and resilient food system.

Because we work directly with local farms, we’re able to build strong relationships across the supply chain from grower to miller to baker, ensuring that everyone involved is supported and connected.

Population wheat also offers greater crop biodiversity, which is essential for organic farming. With a wide range of genetic traits, the crop is naturally more resilient to varying conditions and requires fewer inputs. Even in difficult growing seasons, farmers are more likely to harvest usable grain. Over time, the grain continues to adapt and evolve to our local climate, strengthening the future of organic farming in the region.

This is a strong bread flour, ideal for artisan baking, with exceptional flavour and performance. Like all our flours, it is stoneground on traditional horizontal millstones, preserving the full character and nutritional value of the grain.

Benefits of Stoneground Flour

The slow, cool grinding process used to make stoneground flour helps to preserve the natural oils and flavours of the grain. This results in a flour that has a richer, nuttier taste compared to commercial roller milled flour.

Stoneground flour typically contains more fibre compared to commercially milled flour. Fibre is important for digestive health, as it helps to promote regular bowel movements and can aid in weight management.

Why Choose Organic

Organic flour is less likely to contain harmful residues from pesticides and herbicides. Organic flour is not only beneficial for your health but also for the environment. Organic farming practices promote soil fertility and biodiversity, which helps to maintain healthy ecosystems. By avoiding the use of synthetic chemicals, organic farming reduces water pollution, soil erosion, and the release of greenhouse gases.

By choosing organic flour, you are not only prioritizing your health but also supporting sustainable agriculture and protecting the environment.

Growing Relationships

We pride ourselves on building relationships with both our suppliers and our customers, making sure that we are buying sustainable quality produce and working with farmers for the years to come.

We are always listening to our bakers feedback and working with them to use more locally grown grain and rely less on the imported grains. There is still work to be done but the future looks bright!
